
Once people have tasted really good coffee, “there is no going back,” says Andrew Hetzel, founder of Cafemakers, a specialty coffee consulting firm based in Hawaii. "Coffee is the new wine," affirms Hetzel...kind of an encouraging statement that makes one think that the days of a restaurant's offerings being limited to either "regular" or "decaf" are numbered. And although U.S. coffee consumption is remaining fairly flat, there is more and more of a shift from commercial coffees to specialty and boutique coffees.
And this makes us very happy :-) And another thing that makes us happy is that the final replacement piece for our roaster is due in on Tuesday. Thank you to everyone who has written us encouraging emails in this week of literal "trial by fire."
